Lemon Cookies

Lemon Cookies

Ahh.... a Sweet Sunday's Yummy Lit Review! I can't believe January was the last time I baked cookies and wrote one of these posts. Oh, how I've missed Sweet Sunday's!

Last night I decided to hop into Spring by making a batch of sugar cookies decked out in bright and cheerful coloured icing. I shared my favourite sugar cookie recipe last October. So, this time around, I thought I'd try lemon cut-out cookies.


I've delved into Company's Coming: Cookies, by Jean Pare, for this week's recipe. On page 91 we are told we need:

1/2 cup butter or margarine, softened
1/2 cup granulated sugar
1 egg
2/3 cup sweetened condensed milk
2 tbsp lemon juice
1 tbsp grated lemon rind
1 tsp vanilla
1 1/4 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt

Cut butter and sugar together well. Beat in egg. Add milk, lemon juice, lemon rind and vanilla.

Stir flour, baking powder and salt together and add. Mix well. Roll out on lightly floured surface. Cut into any desired shapes. Bake in 350* F oven for about 8 minutes. Glaze. Makes approximately 6 dozen, 2 inch cookies.


Glaze recipe:
3/4 cup icing (confectioner's) sugar
1 1/2 tsp lemon juice
2 tsp water

Mix all 3 ingredients together adding more sugar or water if needed to make a barely pourable glaze. Frost cookies.



I'll start by saying that I am still in love with my childhood cut-outs. Maybe it's psychological, but those cookies are so yummy they bring a smile to my face. But, don't get me wrong - this week's lemon cookies are delicious.

I did change this week's recipe a tad. I didn't have an actual lemon lying around my kitchen, so I vetoed the grated lemon rind from my bowl. In hindsight, I probably should have made the drive to the local market - the lemon flavour is only a faint undertone in these cookies.

I did make up for the cookies' lack of lemon flavour by adjusting the glaze's recipe. I added extra lemon juice (sorry, I don't have an accurate measurement for this - I just poured).

My final product -- lemon teapot/fleur-de-lis/key cookies -- are very delicious. The sweet and creamy flavour of condensed milk, tart lemon, and moist texture make this cookie worth remembering.

And I love lemon cookies, I didn't realize you could make lemon cut-out cookies. :) Your cookie cutters are precious, and I'm still working on expanding my small collection. This is a recipe I'll definitely have to try out either in spring or over summer. :D
